I love to bake and cook. Seriously.
When summer comes I do feel a loss in the kitchen. It's too hot to turn on the oven as often as I normally would. Even fruity baked good that usually accompany summer, don't normally find a place at our house. The berries and fruits are eaten fresh, never seeing the inside of an oven. Not that that's a complaint. Nothing better than a great piece of fruit to eat.
So when recipes like this come around, in the summer, I am grateful.
Easy, check.
Tasty, oh yeah check.
Requires no oven, check.
All the requirements for summer "cooking" met.
The dressing itself is very simple to make and this recipe makes a lot. I like to make it in a mason jar and save the rest that is left over for future wraps and salads.
Honestly, you don't have to make the wrap. This salad holds up quite well on it's own. It tastes delicious as a side salad and you could even add chicken to make for a more fulfilling meal. It's so versatile.
