Operation Use That Herb Garden: Perfect Summer Lunch

This is the type of meal that makes me happy in the summer time. It's filling but not heavy, refreshing but not too light. Just a perfect balance of deliciousness. You know, if you like tomatoes.

Plus it uses fresh herbs, specifically basil, but uses fresh herbs has been almost a requirement for new recipes lately. So I can use and keep up with my herb garden.

Plus, I like to try to use basil in other ways aside from pesto. Not that I don't like pesto. Quite the opposite. I could eat it three times a week. Sometimes I do. But the family kind of revolts if I dwell on one thing (like pesto) too much.

I got the idea form alexandra's kitchen. Although her tomatoes and grilled bread are paired with a fresh homemade ricotta. Geez, my mouth is just watering at that thought. Fresh. Homemade. Ricotta. Great, now there's something else I have to put on the long list of things to attempt to make. I just used some laughing cow wedges to substitute, but I was dreaming of fresh ricotta the whole time.
