This is the type of meal that makes me happy in the summer time. It's filling but not heavy, refreshing but not too light. Just a perfect balance of deliciousness. You know, if you like tomatoes.
Plus it uses fresh herbs, specifically basil, but uses fresh herbs has been almost a requirement for new recipes lately. So I can use and keep up with my herb garden.
Plus, I like to try to use basil in other ways aside from pesto. Not that I don't like pesto. Quite the opposite. I could eat it three times a week. Sometimes I do. But the family kind of revolts if I dwell on one thing (like pesto) too much.
Tomato Salad with Grilled Bread
Ingredients:
A couple of tomatoes
extra-virgin olive oil
A couple of tomatoes
extra-virgin olive oil
balsamic vinegar
kosher salt
fresh basil
homemade ricotta
a loaf of bread suitable for grilling
Instructions:
1. Cut tomatoes into nice chunks and place in a bowl. Season with salt. Drizzle with olive oil and balsamic. Toss with fresh basil.
2. Heat a grill or grill pan. Brush with olive oil. Grill bread until nice and toasted. Serve along side your tomatoes.
